Burrito

Ingredients: 1/4 cup Green Peppers (Minced)

1/4 cup Onion (Minced) – 1/4 cup Tomato (Minced)

1 small can of Chili’s – 2 tbsp of Butter – 6-8 Eggs

1/4 cup Salsa – 1/4 cup Sour Cream – 1 Ripe Sliced Avocado

4 Wheat or Spelt Tortillas

Directions: Saute green pepper, onion, tomato and chili’s in butter over medium heat. Scramble eggs and add to vegetables. Cook to desired dense. Spoon egg and vegetable mixture on to wraps. Add salsa, sour cream and avocado slices to taste and wrap up.

Soup for When you are Sick (or even when you aren’t!)

This is one of my Dad’s favorite soups!

3 C of broth

3 C cubed or chopped up chicken or turkey

1 C sliced carrots (about 2 carrots)

1 C sliced celery (about 2 stalks)

1/4 C chopped onion (1 small onion)

1 T chicken bullion granules or 1 cube  (we actually don’t ever put this in)

1 C uncooked noodles or 1/2 C rice (we usually use rice because my mom & dad can’t have wheat)

Mix it all up in a big pot and serve when the veggies are tender but NOT mushy! 😉
